I brought it to Friendsgiving and it was a hit! I loved the flavor of the pumpkin cake and the caramel flavor was such a delicious add to the cream cheese frosting. I did struggle with the caramel sauce being a little too runny (and it also didn’t help that my cake layers were not totally flat) but I think that’s user error lol!

Possibly the best cake I have ever made. I chose to use two 9 inch rounds because that is what i had and it just needed an extra 5 minutes in the oven. The frosting paired well with the cake and everyone loved it! Highly recommend you try this recipe!

This may be the best cake I ever made – and I bake a lot. Making it next week for the 3rd time based on requests. Everyone praises this cake – taste and looks. I 1 1/2 times the frosting and double the glaze recipe since I find those proportions work better but otherwise I wouldn’t change a thing! Thanks for such a great recipe.

NIS, I am not surprised your cake didn’t taste anything close to pumpkin if you used veggies that you had on hand? Maybe try yams or orange sweet potatoes next time. Oh, and use pumpkin spices that are sold in the spice section, that should bump you up to pumpkin texture and flavor. I just got back from the store for a couple ingredients I was missing to make this cake for Thanksgiving.. Only thing I couldn’t find was FIGS. Every store told me I missed the season by 2 weeks. I will use sliced apples like Sofi suggested instead. Glad your cake tasted good.

Can’t wait to try it. I’ll update review afterward but based on sampling while preparing, I’m sure it will be delicious. One quick question. I made the caramel and it came out fine but I feel there wasn’t quite enough (top and drips seem a bit spartan). I have the decorated cake in refrigerator now but would it be possible for me to make more caramel and add it to the top even though I’ve already refrigerated? Thanks!
