If I were to half this recipe, could I use two 4 in cake rounds? It’s just for me and my husband!

Also could I sub dates for the raisins?

You can just omit it! It will bring down the moisture slightly but it works totally fine!

I swear it used to have even more sugar. 1 1/2 cups seems fair, but I swear I made this recipe like 5 years ago and I remember thinking, wow that’s an obscene amount of sugar. LOL either way- love love love this cake !!! Thank you for the recipe !

My friends & family loved it. I have drained the excess moisture from pineapples and left the carrots as is. Used fresh shredded coconut instead sweetened and used 160grams of powdered sugar for the frosting( reduced sugar as per our taste ).
My only mistake was I over whipped the frosting( as I did not follow the instructions properly), bringing it to slightly curdle. Nevertheless I have used the frosting just on top of the cake… next time, I will follow the instructions as advised especially while whipping the frosting.. will definitely make it again..

I swapped out the vanilla extract for fresh vanilla beans for the frosting and it’s such a hit! My brother just reached out to me again and requested one for his birthday because it was so good on Easter. Love your recipes! Thank you for sharing with us 💚

You can definitely make these as cupcakes! You can make the recipe as directed and then bake them off in a muffin pan. I’d bake them at 400F for 5 minutes (this will help them rise and get a nice domed top) and then lower the temperature to 350F and bake for 18 more minutes or until they spring back to the touch! Depending on how big you make them, you should get between 20 and 24 cupcakes!
