Leftover Halloween Candy Cookie Bars
Halloween is easily my favorite holiday. I love all the spooky fun, excessive amounts of pumpkin bread, going all out on a costume, and it goes without saying, that I LOVE the candy. And Halloween is the one time of the year where it is perfectly acceptable to pound mini kit kats with no judgment. Orrrr you can chop up all that candy and mix it into a chewy, buttery, delicious halloween candy cookie bar.

You know those little jack-o-lantern candy buckets that kids carry around on Halloween? Well growing up, my house had one of those year round AKA “the candy bucket.” To this day, it has a never ending supply of candy in it and is magically replenished whenever it’s running low.
I can still picture the frisbee eyes on my elementary school friends when they came over to my house for the first time and discovered the candy land we lived in compared to their sugar free homes.

The weird thing about having candy around us constantly was that it meant we didn’t feel the need to binge on it, because it was always available. So, while other kids were scarfing down all their candy on October 31st, I’d have two or three pieces and dump the rest in the candy bucket for a later date. Like breakfast tomorrow maybe 🙂
It also meant we always had a lot of leftover candy. And sometime my mom would want to use all that candy up to free up some space for more candy. Thus halloween candy cookie bars were formed.

What kind of candy should you use for Halloween Candy Cookie Bars?
Any kind of candy ! This recipe is super adaptable so really whatever you have on hand will do! We had a variety bag of Halloween candy for all the neighborhood kiddos so we used Twix, Snickers, Kit Kats, M and M’s, Reeses, and a handful of candy corn. Simply unwrap all your leftover candy, chop into bite size pieces and fold into your blondie batter!

Tips for making the best cookie bars:
Follow these tricks and you will have the best halloween candy cookie bars ever.
- DO NOT OVER MIX YOUR BATTER: Just don’t do it, okay? When you over mix your dough, you build up more gluten which leaves you with a dry, and tough cookie bar. Not what you want, right?
- Use a variety of candy: It’s fun to use all different kinds of chocolate bars for variety and different textures!
- Don’t over bake: You’ll want to take these out when they’re still gooey in the center to prevent drying out!

Ingredients
- 1/2 cup unsalted butter, melted
- 3/4 cup packed light brown sugar
- 1 large egg + 1 large egg yolk, room temperature
- 2 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 3/4 cup chopped candy bars*
Instructions
- Preheat the oven to 350°F. Line an 8 x 8-inch square baking pan with parchment paper on all sides. Set aside.
- In a large mixing bowl, whisk the melted butter and brown sug ar until combined. Whisk in the egg, extra egg yolk, and vanilla until combined.
- Add the flour, baking powder, and salt. Use a silicone spatula to fold until combined and no streaks of flour remain. Gently fold in the chopped up halloween candy, mixing only until combined.
- Use a silicone spatula to scrape the batter into the prepared pan, spreading to the edges and evening out the top.
- Bake until the edges are set and the blondies are golden brown, 25 to 30 minutes. The middle may still look underbaked, but they will continue to cook as they cool in the pan.
- Place the pan on a cooling rack and allow the bars to cool completely in the pan before slicing into 9 big bars or 16 smaller ones! Enjoy!
Notes
- You can use whatever kind of candy you have on hand! Our favorites are Reese’s, Twix, Snickers, M&Ms, and Hershey’s bars!
These are perfect every time! The recipe is so quick and easy, and it’s fun to change up the flavor with whatever chocolate I have on hand. Everyone loves these, and it’s now a go-to recipe for both me and my mom.

Yum! I thought these were just okay, but my friends and husband loved them! I would maybe omit candies with caramel (like snickers and baby Ruth) next time because they got a tad hard when baked, but these were so simple to make and loved using up our excess Halloween candy 🙂
