It’s about figgin thyme for a cocktail. A fig and thyme cocktail, that is.
I go wild when I see figs at the grocery store. There’s something so magical about them. Their shape, their colors, and their texture. They’re one of the only ingredients I will get every single time regardless of if I have a use for them or not.
So seeing as figs are around right now, I just HAD to make a fig cocktail. Figs are weirdly fall-ish, making them perfect for an autumnal cocktail. But just because it’s autumnal doesn’t mean it has to be all orange and maroon.
This cocktail has all the flavors of fall- herbacious thyme, tart hard cider, and warm figgies- in a gorgeous coral pink presentation.
I’m a firm believer that cocktails are drinks that anyone can make at home. You don’t need five different aperitifs, two bitters, and smoked salt to make a delicious and dynamic cocktail. You just need ingredients that blend together in a way that compliments each other well.
So this Fig and Thyme cocktail is made entirely with things you can get at any store- figs, lemons, thyme, and hard cider.
Of course the low key star in this cocktail is Absolut Elyx, a copper distilled vodka. I say low key because it’s so crisp and clean, it blends into any flavor profile.
If you’re looking for a delicious, easy, and stunning cocktail for the holidays, this cocktail is hard to beat.

Fig and Thyme Cocktail

Ingredients
for the thyme simple syrup:
- 1/2 cup sugar
- 1/2 cup water
- 1 large bunch fresh thyme leaves (leave out a few for garnish)
for one cocktail:
- 2 fresh figs
- 3/4 oz fresh lemon juice
- 3/4 oz thyme syrup
- 1.5 oz Absolut Elyx vodka
- 1.5 oz hard cider
Instructions
- In a small saucepan over low heat, simmer the sugar, water, and thyme leaves for 5 minutes. Remove from heat and allow to sit for at least 10 more minutes so the thyme infuses into the syrup.
- To make the cocktail, muddle figs and lemon juice into a cocktail shaker. Add in a generous scoop of ice, along with lemon juice, 3/4 oz of the thyme syrup, and vodka. Shake until well chilled, then strain into a coupe glass. Top with 1.5 oz hard cider (or to the brim of the glass). Garnish with a slice of fig and a sprig of thyme!
