Oh no! So sorry to hear these ended up cakey for you! Was your banana pretty ripe? I also find if the banana isn’t as ripe they don’t get as chewy because the sugar content is lower!

I made a batch using US measurements and another using metric, weighing everything to compare. The amount of flour and sugar ended up way different, but both batches were delish.

I used a ripe but not overly ripe banana & the cookies tasted really banana forward. I browned the butter & used bread flour. Would definitely make again! Might use less sugar next time but overall super happy with them. So much quicker than trying to bake banana bread too. Definitely give it a try!
