I added a half tsp ginger seasoning and made it with unsweetened coconut milk and topped it with pumpkin seeds. Next time I’ll make sure to have a loaf of crusty bread on hand, or blueberry muffins perhaps. And using a carrot peeler to peel my squash made it super easy to work with.
