Hi Deb! Oooh I’ve never tried adding roasted red peppers to this but I think it would be delicious and really deepen the flavor. If you try it let us know how it goes!

I wanted to stretch it a bit and provide some additional flavor – have you ever added a jar of roasted red peppers?

Hi Lisa! We usually just leave them in–our blender powers right through the seeds. You can always strain them out or deseed them if you prefer!

This looks delicious, but you didn’t mention removing the tomato seeds. Do you leave them in? Just curious. My immersion blender and food processor doesn’t break up the seeds.

It’s really, really good! Baking the veggies like that imparts a deeper flavor, from the onions and garlic. I put a lot of basil in there and used an immersion blender (less drama than a big blender! LOL).

I also added some heavy cream, and made some garlic bread.

I am definitely using this approach again.

I will add cream to add a bit of richness. I followed the recipe and used our garden tomatoes. Mixture of 4 kinds of tomatoes and some cherry tomatoes. I’m not much of a cook but since I retired I have time to see what I’m capable of. Can’t wait to have it and a grilled cheese for dinner. Thank you! Vicki

I used half roma/plum tomatoes roasted and a can of san marzano tomatoes for this so tasty. Warms the soul.
