Ooh I think that would be DELIGHTFUL! I would wait to make the filling until the day of. Alternatively you could make the whole pop tart and then freeze the unbaked pop tart until ready to cook it!

Me too–currently have a pumpkin bread in the oven hahaha. This is a great catch! I’m so sorry that that was worded very confusingly. The egg is for the filling and you will need an additional egg for the egg wash! I just updated the recipe to be clearer! Hope you enjoy ๐Ÿ™‚
