The crust won’t unroll nicely if it’s not room temperature, so I would do it at room temp!

Is it possible to use a different brand of cocoa powder? Foreign processed anything is hard to find where I live (I live in a middling sized Kansas town and we don’t go to Walmart often) and if I use a sweeter chocolate with it be better without the cocoa powder? Sorry but I don’t have much experience with baking. I’m more of a cook than a baker but this looks easy enough and rather fun.
