Hi Ali! Another biscuit like cookie like a digestive cookie could do the trick but I haven’t personally tried these with anything other than graham crackers!

I’ve never actually had key lime pie, but these are SO yummy when I’m craving something tart. I just used regular limes instead of key limes, and it still tasted great.

I followed it to the T and it came out great. I even have some ideas for other flavor combinations for this very versatile cookie base. I omitted the key lime zest and juice, to create a basic graham cracker cookie and then filled it with a dulce de leche filling. I love how I can use this recipe in so many ways! The original recipe and the variation I made were both delicious!

Hi Chavi! You can freeze them but the filling tends to get a little goopy when it defrosts!
