Hi Jillian! So sorry to hear that happened to you–any chance you used quick oats instead of old fashioned by mistake? If not you might have overmeasured your flour. Make sure you really fluff up and spoon and level it into your measuring cup!

My girls absolutely love them, unfortunately my husband is not an American sweets kinda guy (Hes Middle Eastern). With that being said I eat a lot of them, I dont make them as often anymore. I did make them today though! My son lives 4 hours away and always requests these when I see him. Im making him a full batch to store for later. I can enjoy one for myself also, its a win-win! Definitely recommend.

I did half a cup shredded coconut (desiccated not fresh) and half a cup oats.
I made sure the browned butter had completely cooled before commencing with recipe then popped the finished dough in the fridge for 30 minutes. I rolled a tablespoon of dough into balls before rolling them in crushed pecan nuts.
Baked at 170C (fan forced) for 11 minutes and rested for 10 minutes.
The recipe yielded 20 perfect cookies that were about 8cm in circumference (perfect thickness) and was chewy with crunchy edges.
My new favourite cookie recipe.
