Hi Amanda! We made the pumpkin cheesecake not overly sweet to balance out the caramel! You can certainly add more sugar if you’d like though 🙂

Is 3/4c brown sugar supposed to be the only sweetener in the cake or is something missing on the ingredient list? Love your site and recipes – I also make the maple brown butter chess pie for Thanksgiving, and it’s a hit every year!

I would do about the same amount of time, though the test for doneness is if the cheesecake giggles slightly, but still is firm to the touch!
