No cracks, very level and creamy. I did add about a tablespoon of lemon juice to the batter when my bf wasn’t looking, but he had no complaints. He went to a few stores in search of the DeLallo spread, and sadly could not locate it. I believe we ended up with Dalmatia. We took it to Thanksgiving at his family’s and they loved it. Hi Sam! Great questions! The water does not need to boil! We usually keep it in the water to cool for about a half before removing it!

-Should the water be boiling before adding the cheesecake to the water bath?
-Does the cheesecake cool in the water bath or should I remove it immediately after the 1hr and 10min bake time?
