Hi Kaylin! We’re so happy to hear this cake was such a hit for you. I’ve never tried that bakery emulsion–we usually use Watkins! It’s possible the flavor it a little different 🙂

The only thing I’ll do differently next time: I used LorAnn coconut bakery emulsion and felt like the coconut flavor it added imparted a slightly too pina colada taste.. Next time I might order Watkins coconut extract and see if I like it more to decide whether I will include extract in the future or not.

The whole cake is being made in the mixer with the whisk attachment – up until the frosting (when you switch to the paddle- correct?
Also- do you think shredded coconut would work as well? toast it?
Lastly – should coconut cream / cream cheese be cold or room temp for the icing?

You can make your own buttermilk with any kind of milk and lemon or vinegar!
